Claus Henriksen

For over 15 years, Claus Henriksen has created culinary art from ingredients from the local nature in Odsherred. He has been at the forefront of targeted development work at Dragsholm Slot and was instrumental in receiving their first Michelin star. Since 2021, the star chef has opened three restaurants in Anneberg Kulturpark. The first was restaurant MOTA, which has won numerous awards and recognitions, including a Michelin star.

With both food and setting, MOTA marks itself on the international gastronomic map. To make the dining experience something truly special, every detail from interior design to serving has been taken care of. Anneberg Kulturpark's owner Gitte Klausen has designed unique furniture, which is handmade for MOTA in the park's own carpentry workshop - and Claus Henriksen has himself produced ceramic service for serving the tasty dishes.

In 2023, Claus Henriksen opened restaurant ERBA, which is an unpretentious dining house with space to relax, hang out and have fun. His dream was to create a place for those who want to enjoy a cup of coffee or a glass of wine and some snacks when visiting Anneberg Kulturpark, but also a place where families with children can have a quick meal - or friends and colleagues can enjoy an Italian-inspired menu made from local ingredients. Claus calls ERBA's menu “Odsherred in Italian”.

Claus Henriksen opened his latest restaurant called FRU KLAUSEN in the summer of 2024. Together with Anneberg Kulturpark's owner Gitte Klausen, he has created an open faced sandwich restaurant with a modern menu, where the fish is freshly caught locally, the mayonnaise is made from beach crabs and the herbs are harvested in the area around Anneberg Kulturpark.

Claus Henriksen's great interest in and exploration of local foods and herbs has become his signature. He is known for his personal and uncompromising approach to his cuisine - and he has helped put Danish gastronomy on the world map like few others. He is creative with the ingredients and therefore has a rare ability to create new taste experiences - and he is unique in combining his culinary skills with humor and a desire to surprise. For example, he has hemp on the menu, which in its natural raw form is not euphoric, but a healthy vegetable - and he has won an award for a dessert consisting of lobster, chocolate and ice cream.
